How to cost your Coffee

With the increase in milk prices it’s a good time to review coffee prices. I notice that many establishments have done this already.
A kilo of Laffare coffee beans in MenuCoster currently costs 43.90 plus GST – that’s 49.38 inclusive. To make a single shot you will need around 8 grams and a double shot 16.
So generally you’ll get around 65 – 70 drinks per kilo if you serve a mix of single and double shot drinks (and allow a little for wastage and staff consumption).
If you sell your coffees for 3.00 each on average, you should achieve around 2.24 (inclusive) gross profit from every kilo you use. That’s a gross profit of 150.00 for each kilo of coffee used. You should expect to use at least ten litres of milk per kilo of coffee (17.50) and then you need to factor in several other things… sugar, takeaway cups… You will soon know how profitable (or unprofitable) your coffees are.
