How often should you change your menu?

I believe to be truly seasonal in NZ a menu should be changed at least 6 times a year. Who benefits from changing a menu? Well, apart from the stress of changing over mise en place for the kitchen brigade, and the agony briefing servers on the new items, there are actually a lot of good points about changing over a menu. Firstly, diners return more frequently to sample your new items. You can adjust pricing based on sales analysis. One of the most important reasons I believe is to give your diners better value for money as you use seasonal produce you can get better prices for. By knowing what is in season you can gauge how long the season is for and what the quality of the produce will be like.
