Extreme food price changes

Something I think we have all learnt in 2008 is how much products can fluctuate in price. Even products which we believe are stable, like dairy, can change significantly forcing us to substitute or increase prices. Of course products can also swing the other way as we saw with tomatoes just recently due to Australian imports bringing prices below 1.00/ kg in some areas.

It remains more important than ever to remain flexible with menu items and be able to change items at a moments notice. I believe we have also become a lot more dependent on our local suppliers, making our food fresher, supporting the local economy, and giving our customers the best value for money.
