22 percent of NZers prefer meals without meat

In a survey conducted by Ac Neilsen, it was revealed that 22% of NZers prefer meals without meat. If nearly quarter of our population really feel this way, then why is it that vegetarian choices are so limited on menus? Are we stuck in a time warp serving un-imaginative meals like roast vegetable salads as the only vegetarian choice on a menu? Dont get me wrong… for me a meal without meat is not complete. I dont know too many chefs who love serving vegetarian or special diet meals.
Or is it a case of this 22% of the population not wanting to dine out? Are they not able to recognise vegetarian items, or not trusting that they really are vegetarian? What would happen if you prepared a menu with a reasonable selection of vegetarian items and promoted it?
